Pumpkin Bread



I had to share this recipe with you today- it was so very tasty! Also, with fall before us, it proved to be the perfect fit on a chilly morning. I took a look at a few different recipes and made a few tweaks. I hope you enjoy!! The following recipe will make two loaves.


Ingredients
3 cups flour
1 teaspoon of salt
2 cups sugar
2 teaspoons baking soda
2 cups canned pumpkin
1 cup olive oil
4 eggs, beaten
1/2 cup water
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon allspice

Topping Ingredients

¼ cups Butter, Softened
½ cups Brown Sugar
¼ cups Oatmeal
¼ cups All-purpose Flour
1 teaspoon Cinnamon


1) Preheat oven to 350°F.  Sift together the flour, salt, sugar, and baking soda.
2) Mix the pumpkin, oil, eggs, water, and spices together, then combine with the dry ingredients and mix.
3) In a separate bowl, mix together the topping ingredients. Mixture should be crumbly.
4) Pour bread batter evenly into two greased loaf pans. Cover each with half of the topping mix. Bake 50-60 minutes until a thin skewer poked in the very center of the loaf comes out clean. Turn out of the pan and let cool on a rack.
